co:llab coffee is a Hong Kong based micro-roastery established in 2016. We serve nordic style specialty coffees and roast-to-order to make sure every pack of coffee you receive is fresh and tasty. Quality control and consistency are the values we always keep in mind from sourcing, sampling, roasting to packaging. Green coffees are sourced only from reputable producers and importers we closely work with. We request samples for evaluation as to ensure the lots arrived will match our requirements and are free of defects.
nordic light
In the world of specialty coffee, “nordic style” means the beans are light-roasted. As opposed to the traditional impression of commercial coffees which taste bitter and burnt, nordic style roasting reveals their “unique characteristics” (some use the term “terroir”) - some can be floral, delicate while others can taste bright and fruity. It all depends on the origins, varieties and processing methods adopted by the farmers.
co:llab loves nordic style roasting for its clarity and juiciness in the cup, yet it does not mean that coffee beans should always be roasted to the lightest degree. Roasting “too light” can sometimes present unpleasant flavors because the inside is still under-developed. Instead, a well-developed light roast should consist of a good balance of aroma, acidity, sweetness and body. High quality green beans, carefully executed roasting protocols and consistency are the keys to successful roasting.
cupping
Cupping is the industry standard for coffee quality evaluation. It is simple, efficient and consistent as it does not involve brewing techniques and cause variations. We roast and cup samples provided by green suppliers to verify flavor characteristics and defects before making purchase decisions. Besides, we cup all roast batches after roasting to make sure the flavors are consistent, defect-free and up to co:llab’s standard.
